Our standard
Fresh, and not for long.
Offal is the most fragile thing we handle, and we treat it that way. Each piece is cleanly taken, cleaned, cut into small portions, vacuum-sealed and deep-frozen within hours — before air and time can get to it.
We don't keep offal for months. Its fat oxidises fastest in the first few weeks: the omega-3s and the most fragile nutrients are the first to go. So we keep the window short, never refreeze, and send you a piece that has been frozen once and once only.
It isn't a selling point. It's simply the only way we think a food like this deserves to be handled.
